Makgeolli, Korean Traditional Alcoholic Beverage with a rich homebrew tradition.
Danyangju recipe
1kg of sweet rice
1liter of water
200g of nuruk
1. Wash rice until water runs clear.
2. Soak rice overnight.
3. Drain for an hour.
4. Steam for around 40min.
5. Cool rice to 78 Fahrenheit or lower
6. Massage rice with water and nuruk.
7. Bottle and ferment at room temperature.
8. Aerate twice a day for the first three days.
Please sanitize tools and hands with 70abv alcohol.
